In einer Pfanne etwas Fett erhitzen und das Gefl\u00fcgel von allen Seiten goldbraun braten und zur Seite stellen (darauf achten, dass das Huhn noch saftig ist, also nicht durchbraten)<br \/>\nSonnenblumen\u00f6l im Wok erhitzen und die Madras Paste hinzuf\u00fcgen. Nun die Paste mit dem Holzl\u00f6ffel bei mittlerer Hitze bearbeiten, es verbreitet sich ein sehr aromatischer Duft, da sich die Gew\u00fcrze in der Paste durch die Hitze im Wok zur vollen Wirksamkeit entfalten. Die fein gew\u00fcrfelten Zwiebeln und die kleingeschnittenen, filetierten Tomaten in die Paste geben und weiterr\u00fchren. Das Ganze wird nun langsam past\u00f6s, fast p\u00fcr\u00e9e-artig. Den Knoblauch hinzuf\u00fcgen und die Paste mit dem Curcuma-Pulver w\u00fcrzen.<\/p>\n<p>Klein gehackten Koreander und Petersilie hinzuf\u00fcgen, r\u00fchren. Kleinst geschnittene Limonenzesten dazu geben. Mit einem Sparsch\u00e4ler Streifen aus den Zucchini schneiden und in den Wok geben. Mit der Kokosmilch auff\u00fcllen und r\u00fchren. Die H\u00e4hnchenbrust dazugeben, Temperatur reduzieren und ca. 10 min ziehen lassen. Mit Reis und Mangoscheiben servieren.
