<p><em>Zutaten für 3 Personen</em></p>
<p>200 G Le Puy Linsen<br />
2 kleine Zwiebeln<br />
etwas Olivenöl<br />
Saft von 2 Limonen<br />
Salz, Pfeffer<br />
1 Knoblauchzehe<br />
2 Lorbeerblätter<br />
1⁄2 Bund frischer Koreander</p>
<p>Crostinis:</p>
<p>dünn geschnittene Baguette &#8211; oder Brötchenscheiben<br />
2oo G Cottage Cheese<br />
etwas Paprikapfeffer<br />
Olivenöl<br />
Limonensaft<br />
Salz und Pfeffer</p>
<p>Romanesco:</p>
<p>1 frischer Romanesco Kopf</p>
<p><em>Zubereitung:</em></p>
<p>Linsen mit kleingeschnittenen Zwiebeln und den Lorbeer-Blättern anbraten und mit Wasser ablöschen.<br />
Ca. 25 Minuten köcheln, vom Feuer nehmen und abkühlen lassen.<br />
Limonen auspressen und den Saft zu den Linsen geben. Knoblauch ganz klein schneiden und ebenfalls hinzufügen, mit Salz und Pfeffer abschmecken. Koreander klein schneiden und hinzu fügen, am Ende kräftig mit Olivenöl begießen und gut durchmischen. Der Linsen-Salat darf gerne eine kräftige Säure haben.</p>
<p>Cottage Cheese nach Geschmack mit Olivenöl, Knoblauch, Limonensaft, Salz und Pfeffer würzen. Kräftig mit dem Schneebesen schlagen. Baguette oder Brötchen in dünne Scheiben schneiden und unter dem Salamander oder dem Grill cross backen, abkühlen lassen und mit der Cottage Cheese Mischung bestreichen, einen Klacks Paprika-Pfeffer drauf, fertig. Übrigens kann der Cottage Cheese ganz nach Ihren Vorstellungen gewürzt werden, im Prinzip ist meine Rezeptur nur ein Vorschlag.<br />
Vom Romanesco sorgfältig die Röschen abtrennen und im siedenden Wasser 4 Minuten blanchieren, sofort mit kaltem Wasser übergießen damit die grüne Farbe erhalten bleibt. In einer Pfanne etwas Butter auslassen und eine ungeschälte Knoblauchzehe hinzufügen. <p>Zutaten für den Salat:</p>
<p>1 Gurke<br />
1 frische Knoblauchzehe<br />
etwas Petersielie<br />
1 Granatapfel<br />
Geröstete Sonnenblumenkerne<br />
Szechuan Pfeffer und Salz nach Geschmack<br />
4 EL Olivenöl<br />
Saft zweier Limonen<br />
etwas frische Chili-Schote (nach Geschmack)<br />
4 Schalotten</p>
<p>Alle Zutaten klein würfeln, mit Olivenöl, Salz, Pfeffer und den anderen Zutaten zu einem frischen Salat vermengen, Granatapfel-Samen auslösen und hinzufügen.<br />
Schmeckt auch sehr gut mit Oliven, hatte ich nicht im Haus.</p>

Das Wintergemüse schmeckt irgendwie nussig, außerdem schätze ich die Sensorik der Knolle. Die Liaison der fruchtig-blumigen Aromen mit den erdigen Düften ist perfekt. Das Gemüse erhält eine ganz neue exotische Qualität. Den Salat habe ich schon für größere Anlässe zubereitet, selbst Gegner des Gemüses waren begeistert.</p>

<p><strong>Zubereitungszeit: </strong>20 Minuten + 20 Minuten Kochzeit der Roten Beete (oder Sie nehmen einfach die geschälte Rote Beete vom Supermarkt)<strong><br />
Zutaten</strong> für den Salat (reicht für eine große Runde!)</p>
<p>1,5 Rote Beete<br />
1/2 Granatapfel<br />
1 EL Nigella Samen<br />
3 EL geröstete Sonnenblumenkerne<br />
Saft von einer Zitrone<br />
Saft von  3 Mandarinen<br />
1 frische Chili-Schote<br />
3 EL Sonnenblumenöl<br />
1 EL Olivenöl<br />
Salz<br />
etwas frisch gemahlener Szechuanpfeffer<br />
Zubereitung:</p>
<p>Rote Bete schälen und so lange kochen, bis das Gemüse noch etwas Biß hat, gründlich mit kaltem Wasser abschrecken. Rote Beete sorgfältig  in Cubes schneiden, das sieht toll aus und die Aromen verbinden sich besser als mit größeren Stücken. Granatapfel-Kerne auslösen und mit der klein gewürfelten Rote Bete mischen. Nigella-Samen, geröstete Sonnenblumenkerne ( erhältich im Feinkosthandel ) hinzugeben. Die Chili-Schote in hauchdünne Scheibchen schneiden, unterheben. Mit Salz, dem Mandarinensaft, dem Zitronensaft abschmecken. Öl dazu geben und alles gut durchmischen. Mit etwas Pfeffer abschmecken.<br />
Übrigens passt auch ein frischer, kleingeschnittener Koriander wunderbar dazu.</p>
<p>Dazu habe ich ein Hähnchenbrust mit Thymianbutter, geröstete Champignons und frisches Mehrkornbrot serviert, ein Genuss!<br />

[typography font=&#8221;Abril Fatface&#8221; size=&#8221;20&#8243; size_format=&#8221;px&#8221; color=&#8221;#e1cca1&#8243;][dropcap]A[/dropcap][/typography]usgezeichnete Tomaten auf dem Wochenmarkt ( Gemüse von Preisler). Die Bilder zeigen eine Auswahl ungewöhnlicher französischer Sorten. Alle süß und schmackhaft. Der Säuregehalt dieser Früchte ist gering, das Aroma extrem fruchtig. Zufälligerweise habe ich diese Degustation auf dem Markt erwischt. Manche Sorten zitieren den Geschmack der Mango, eines Pfirsichs oder sogar von Himbeeren.</p>
<p>Für einen schnellen Salat habe ich die »Rose de Berne« verwendet, sie hat ein herrliches Honig-Melonen-Aroma.</p>
<p>Zubereitung:</p>
<p>Rose de Berne (oder andere Tomaten) dünn schneiden und auf einer Porzellanplatte drapieren.<br />
Etwas Himberessig ( oder weißen Balsamico, wir wollen ja die schönen Farben bewahren) darüber träufeln.<br />
1 EL Olivenöl tropenweise verteilen.<br />
mit Fleur de Sel<br />

<p>Zutaten für 4 Personen</p>
<p>4 runde Scheiben oder Rollen besonders guten, milden Ziegenkäse, der Richtung Frischkäse gehen darf<br />
2 noch knackige Williamsbirnen<br />
Essbare Blüten nach Geschmack z.B.:<br />
rot: Kapuzinerkresse, rosé changeant: Apothekerrose, gelborange: Ringelblume<br />
130gr feiner Zucker<br />
1 Schnapsglas Himbergeist, bzw Marc de Framboise<br />
50 gr. Pflaumenmuß (selbstgemacht oder von guter Qualität)<br />
Salat nach Saison und Geschmack, schön klein gezupft</p>
<p>Für die Vinaigraitte:<br />
Etwas Salz in eine Schüssel geben und in 1 Esslöffel Essig lösen (Salz löst sich ncht in Öl). 3 Esslöffel Öl und etwas Pfeffer hinzufügen. Alles gut vermengen. Der Essig lässt sich durch eine andere saure Flüssigkeit ersetzen, etwa Zitronen-, Orangen-oder Grapefruitsaft. In diesem Fall mischt man eine Hälfte Saft mit einer Hälfte Öl. Auch lässt sich das Öl durch Crême fraiche ersetzen.</p>
<p>Zubereitung:<br />
Die Birnen mit einem scharfen Messer in der Mitte längs durschneiden, das Gehäuse und die Kerne entfernen. Jeweils  eine Scheibe von jeder Birnenhälfte schneiden, die 4 Scheiben müssen möglichst gleichgroß sein.<br />
Den Zucker mit etwas Wasser in einer Kasserolle zum Sieden bringen und reduzieren, er darf dabei gerne etwas Farbe annehmen. Mit kleiner Flamme weiterköcheln und die Birnenscheiben dazugeben. Ca. 3 Min karamelsieren. Am Ende den Himbergeist hinzufügen</p>
<p>Die Birnenscheiben auf den Tellern anrichten, darüber die runden Ziegenkäsescheiben. Den Salat mit den Blüten um die Birnen dekorieren. und mit der Vinaigrette beträufeln. Pflaumenmuß auf den Käse geben.<br />
